Melt butter until it reaches boiling point.
Mix butter and chocolate together and begin whisking in large bowl.
Add half powdered sugar, whisk well, then add other half.
While whisking, add crème fraiche in two stages.
Pass through fine mesh strainer if lumps remain.
Store with plastic wrap touching surface to prevent skin.
