Preheat your oven to 425F.
In a sauce pot over low heat, melt the butter. Once melted, remove from the heat and set aside.
Peel and slice the apple into thin slices. Transfer to a mixing bowl and toss with 1 tablespoons of the brown sugar and a pinch of salt
Grease your baking dish with pan spray and layer the apple slices across the bottom. Bake for 5 minutes to soften the apples
In a mixing bowl, combine the dry ingredients: Sift in the all purpose flour, 3 tablespoons of white sugar, remaining 3 tablespoons of brown sugar, cinnamon and a Pinch of truffle salt or flaky sea salt. Whisk to combine.
In a separate bowl, combine the wet ingredients: The eggs, milk, melted butter, and vanilla extract. Whisk to combine thoroughly.
Add the dry ingredients to the wet ingredients and whisk until no lumps remain!
Pour batter over the par-cooked apple slices and return to the oven. Bake until golden brown and puffed. Don’t open the oven door until it’s fully cooked!
Meanwhile, whip the heavy cream with a pinch of salt, remaining 2 tablespoons of sugar, and ¼ teaspoon vanilla extract until the cream holds stiff peaks.
Slice and serve with the freshly whipped cream. Dig in!!!
