A Quick Mole, Dark and Rough

Ingredients

- dried ancho chilies3
- dried guajillo chilies2
- yellow onion1
- garlic4 cloves
pantry
- chicken stock480 ml
- dark chocolate (70%+)30g
- sesame seeds30 ml
- raisins60 ml
spices
- cinnamon stick1
- cumin seeds5 ml
Method

Toast the chilies in a dry pan 30 sec per side. Don't burn. Soak them in hot stock 15 min.

In the same pan: toast cumin, sesame, cinnamon. Set aside.

Char the onion and garlic in the dry pan until black-spotted.

Blend everything — chilies, soaking stock, charred alliums, spices, raisins, chocolate — until smooth.

Strain back into the pan. Simmer 15 minutes, stirring. Salt. Thin with more stock if needed.

Serve over poached chicken, roast duck, or just over rice with sesame on top.
